Eat Like a Local in Mammoth
In June 2021 I drove to Mammoth, California a geologist's dream playground, located in the Sierra Nevada mountains. Not only was I there to partake in Mother Earth's expansive beauty (for my article on Mammoth Hikes click here) but to also visit a LOCAL! Below is the list of four MUST-VISIT establishments my tastebuds happily experienced during my two-day stay. The vibe at each restaurant gives you a sense of the town. The owners, staff, and local clientele are kind and want to interact with you. They enjoy hearing where you are from, what you are reading, and who you are. They love talking about their town and the geographic history behind it. The food is GREAT. The list below will fulfill all cravings for breakfast, lunch, dinner, and drinks - Bon Appetit!

Every truck stop, every plate was filled and delicious. The only thing was we could not wait to find another one. Heading down the highway, we started our journey to the west coast of Canada. Our little 1980 Datson was filled with camping supplies, small bags of clothes, a little bit of food.

Waffle House - Immune System of the SouthEast U.S.. Top Story - July 2021.
I knew it was all going to hell when Waffle House closed down for more than three days. Waffle House is a staple of trucker diets, road trips, drunk expenditures, stoned experiments, and this-is-the-only-viable-option-out-here-besides-McDonalds, meals. It's hard to drive a significant distance across the Southeast without passing by at least three of those suckers. From Charleston to Savannah, Mobile to Richmond, and even some in the northeast if you can believe it.

New York, 2017
It was in the Autumn November 2017 when me and my dad travelled on a seven and a half hour flight from Manchester Airport, to the city that never sleeps that would be New York City. We arrived at John F. Kennedy International Airport around the evening and already it rained and the clouds quite dull as we would be staying here for about five days. But we were just happy that we landed at a good particular time, eventually when we booked a taxi we were amazed and thrilled at the sight seeing's in the yellow cab around the city centre after crossing Brooklyn Bridge, we even had to lower our heads down when we gazed out the cab windows to see how high the city streets and tower buildings were as we've never come across higher ones like in London before. The city was virtually almost twice the size as England's capital but with taller skyscrapers and wider busier routes.

The Oldest Restaurant in Florida
A Little Bit of History Columbia Restaurant in Celebration, Florida is a Spanish restaurant founded by a Cuban immigrant in 1905. According to their website, it is the largest Spanish restaurant in the world and the oldest in Florida, with the first one opened in Tampa’s Ybor City. They currently have restaurants in Tampa, Sarasota, Clearwater, Saint Augustine, and Orlando (Celebration).

My Restaurant Addiction
I love restaurants. But the last year has taught me that restaurants, as a concept, could use some reworking. Don’t get me wrong, there are some killer places out there that are still serving food and drink. But there are some legendary spaces that are gone. Some who survived the worst of this plague are now struggling because what they were before, doesn’t work in this new reality. Then there are the people who make all of these concepts come to life — how do we pay them a living wage, and make sure that the food we serve is clean both physically and morally?
